how the heck could it have gotten up to 123 degrees where I live and we are one month into summer?!? Arizona is soooo hot.
For the past 2 weeks weve been having tempatures range from 110 to 122. The record temp is 128 degrees in Arizona, so we are close to setting a record temp! Not really related to this post but i needed to mention it. I feel like im going to wilt everytime i go out in the sun!
I miss winter, even though its still 70 degrees in December. Because guys. It’s 116 DEGREES today.
Okay so now I’m going to talk about the recipe.
Duuuude. These roasted nuts are to die for. Okay, not really. But with this recipe I found my obsession with Brazil nuts.
when I find a Brazil nut in the jar of these im like, ”I found a Brazil nut! YES!!!” I feel like i react to these to much.
In a whole can of these from the store (which, by the way, are two and a half cups) there were 3 Brazil nuts. So i have a reason to react the way i do.
I hope you guys enjoy this recipe! Right here i am using my computer fan. Very useful.
Spiced Nuts
Ingredients:
2-1/2 cups unsalted mixed nuts
1/2 tablespoon olive oil, vegetable oil or canola oil
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon sugar (not needed, but reccomend it)
1 teaspoon paprika
1/2 teaspoon chili powder
Directions:
- preheat oven to 275 degrees. very lightly coat a 9×13 inch pan with oil.
- in a bowl mix together all the other ingredients well.
- spread on the pan in an even layer, bake for 6 minutes. stir. bake for 6 more minutes. taste a nut. if its soggy, bake for 4 more minutes. bake and keep stiring until they are dry. it should take between 12 and 20 minutes.
- cool for completely before storing. enjoy or store in an airtight container for up to 5 days

These nuts sound delicious! I’ve made a similar recipe but also added a tablespoon of sriracha sauce – SPICY! 😉
I feel you on the heat. The last two weeks of triple digits every day in Tucson have driven me insane! I told my husband it’s time to move!
Our oldest lives in Phoenix and was down for the holiday. He’s on his way back home and dreading the temps he’ll find since Phoenix is always 5-10 degrees hotter and it’s 104 here right now! 😉

Ugh, I want to move too! Currently it’s 110 degrees. There is an excessive heat warning that has been going on for the past month! Ha!

LOL I know what you are saying and you MIGHT get 6 pecans LOL This is a nice twist on the mixed nuts and sounds delicious. I would have never thought of this but what a great idea.

We JUST bought a second home in Tucson, we close in August. It was 118 the day we made the offer and spent the entire next day in the pool at the VRBO we rented for the week. We are very excited about spending the winter there but the summer temp, oh boy! Hang in there!
